Time to clean out the fridge

Sometimes I get the best on-the-fly ideas when I'm either talking with a friend or commenting on something they've posted...and this on-the-fly moment is courtesy of just such an occasion :) This is a comment on a friend's blog...for your reading pleasure :p

I've come to realize that our lives are like a refrigerator: if we leave things in there for too long, they begin to rot, produce a foul smelling odor & usually make us not want to even go near the fridge. While cleaning out the fridge is not appealing, is quite stinky & produces a large trash bag of straight-up yuck, it is most necessary for the health of all who come in contact with said fridge to go through the cleaning process.

If the fridge represents our heart & soul, we owe it to ourselves & all those we love to go through the stinky & unpleasant process of cleaning out the yuck & throwing it away so we have room for all of the wonderful things that are yet to come :)

I feel I want to expound on this idea, but can't quite get the right words so I'll keep meditating on this thought & hopefully I can add what I come up with :)

Baking just makes it all better...or at least somewhat better

While in the midst of a quite annoying day, to avoid anyone being severely harmed by my hand, I decided that baking would be the best way to relieve some of my frustration, so here it is...

Since I've been out of town sooo much lately, I have virtually no 'staple' ingredients so I worked with what I had...and might I just say that what I had turned out famously.

Step 1: remove box from pantry
Step 2: make sure you have 2 eggs...and yes, there were exactly 2 eggs left
Step 3: decide water is just not luxurious enough for my baking today...substituting with evaporated milk definitely fits the bill
Step 4: follow directions & bake cake
Step 5: cool...this, by far, was the hardest step!
Step 6: decide that dinky little icing packet that came in the box was just not an appropriate topping for this sweet thing
Step 7: mix together a quick cream cheese butter cream frosting - so sorry, no pics or exact measurements - I only made a small amount, but here are the ingredients.

Cream Cheese Butter Cream Frosting

cream cheese - maybe 2 oz.
softened butter - maybe 2-3 Tbsp.
powdered sugar - maybe 5-6 Tbsp.
granulated sugar - maybe 1-2 tsp.
evaporated milk - just a splash...maybe 1/2 tsp.
vanilla extract - just a dash...really, just a dribble

Just blend it all together until it looks & tastes right (how not exact is that...eyes rolling). I always whip my frostings for at least 5 min. after I think the taste is right to incorporate as much air as possible...this makes it fluffy :)

Step 8: cut appropriate serving size & not the serving size you *think* you want
Step 9: douse in gorgeous sweet & creamy frosting
Step 10: snap glamour shots :)
Step 11: enjoy the fruits of my labor
Step 12: get a tish bit weepy when the last bite is all that's left...

So, here's my baking by annoyance...while I'm still somewhat annoyed, my house smells of cinnamon, I've consumed my quota of sugar & butter for the day...and tomorrow, my co-workers can taste the fruits of my annoyed labor.
