No Need to Knead!

Yesterday, I came across a recipe for No-Knead Bread...although this concept has been around for several years, I had never heard of such a thing. While I am not certainly not afraid of kneading bread dough - and have made homemade bread since I was in my teens, the thought of a no-knead version was quite appealing :)

So, I set out on my journey into the land of the No-Knead Unknown! The blog that I wandered across gave explicitly detailed instructions & tons of pictures...hooray!

Last night, I made my dough 7:30pm & put it to bed until about 10:30am today...

Then, per the directions, you dump the heap of dough onto some flour & fold all ends in making sure that it's nice & floured...

Next, you nestle your newly floured blob of dough in a flour-lined cotton kitchen towel - inside of a tall bowl (this allows the dough to rise tall as opposed to wide) - the dough will rest here for another 2 hours...
Once you reach 1.5 hours, preheat your oven to 450 & put in your lid-covered pot; the blog above goes into great detail talking about the pot you are to use...such as a dutch oven, cast iron or fancy shancy glazed iron pot. I only have a large stainless steel pot with a lid, so that's exactly what I used & it worked fine. Just to be safe, I did cut out a round of parchment paper to put on the bottom of the pot just before the dough entered the picture. Both the oven & the lidded pot need to preheat for 30min; when the time is up, remove the pot from the oven, remove the lid, place in the parchment round (very carefully...remember you're dealing with 450 degree metal here); place dough onto parchment round & then shake pot a bit to distribute the dough, replace lid & place into the oven. Bake covered for approx. 30min; then uncover & bake for another 15min or until the top is golden brown & delicious!

Let me tell you, this bread is quite the yumminess! Even though the directions say to let it cool first - who are we kidding here? Hot bread right out of the oven & you want me to wait? Ok fine, I waited 10 minutes...but that was all!

Now, here are the money shots...can't you just smell the aroma???
